coconut cake
100g sugar
100g brown sugar
250g butter
280g flour
1 sp baking powdwer
a pinch salt
3 eggs
1 tsp vanilla essence
250ml coconut milk
350 ml desicated coconut
Method:-
Put sugar, brown sugar, vanilla essence and butter into the mixer bowl. Lower the whisk attachment down into the bowl and blend on high for a few minutes to whip the butter.
When the batter is thoroughly whipped , slow down the speed and start adding in the eggs. Add the first egg and allow to mix in. Then add the second egg. Allow to blend in and add the final egg and mix in thoroughly.
Continue by adding the baking powder, salt, then add half of the flour, little by little, add in some of the coconut milk little by little, allowing each amount to mix in before adding the next batch. Then add a little more flour, a little more coconut milk, add the remaining flour and when thoroughly combined shake in the coconut and give it a quick blend. Switch off the machine, twist off the whip attachment, shaking off any batter and remove the bowl. Finally, give it a quick mix by hand using your rubber spatula.
Place the baking tin in the centre of the oven preheated to 170 degrees centigrade and bake for roughly 45 minutes. Check to see if it's done by piercing it in the centre with a skewer. If it comes out dry it is done!

roast chicken & roast potatoes
Roast Chicken
Ingredients :-
4 whole leg chickens
half cup olive oil
1 tea spoon oregano
salt
pepper
Method :-
Rub the chicken with a little olive oil and season all over with salt, oregano and pepper. Set the oven temperature to 200ºC. Place the frying pan over a high heat and add the rest of the olive oil. When hot add the chicken and brown it on all sides and remove. Put the chicken into roasting tray (I prefer to cover with aluminium foil for cleaning purpose) and start roasting the chicken. After half an hour open the oven and spoon the excess oil and pour over to the chicken. Then cook for a further 30 minutes or till crispy golden brown.
Roast Potatoes
Ingredients:-
5 potatoes (peel & cut to 2 pieces)
5 potatoes (peel & cut to 2 pieces)
3 spoon butter
salt
pepper
Method :-
Boil potatoes to half cook. Drain the water away and let the potatoes cool completely. Place the frying pan over the high heat and melt the butter. Add the potatoes and brown it. Add salt & pepper and brown it on all sides. Remove potatoes into the preheated oven or you can roast together with the chicken.
mushroom soup & garlic bread
Mushroom soup
Ingredients :-
50 g butter
1 onion (diced)
1 leek (chopped)
1 cup fresh button mushroom (chopped)
or
1 can button mushroom
half chicken cube
2 spoon flour
1 1/2 cups fresh milk
3 cups water
2 bay leaves
salt
white pepper
Method:-
Place the pot over a low heat, add the butter and melt it. Add the diced onion, leeks and mushrooms. Sweat them in the butter for about 5 mins without allowing them to colour. When the vegetables are soft and onions translucent, add the flour and mix it in well. Pour the milk and then follow by water, chicken cube and bay leaves. Stir well and season it with salt and white pepper. Leave the soup to cook for about 25 minutes, stirring occasionally. Discard the bay leaves. After the soup has turned creamy, pour it into a blender and blend until no bits remain. It is ready to serve.
Garlic Bread
Ingredients :-
1 baguette (french bread)
5 cloves of garlic
200 g butter
3 spoon chopped parsley
Method:-
Spoon the butter into a small bowl. Place some of the garlic cloves into the crusher, squeeze the handle tightly down and scrape off the crushed garlic into the bowl or you can use a stone mortar (lesung batu) to crush your garlic. Continue this process until all the garlic has been crushed. Add the parsley and mix well. Place the baguette onto the chopping board and cut across diagonally, into 2-3 cm slices, without cutting completely through the bread. Create a gap between the slices, add a dollop of the garlic butter and smooth it down. Finally spread any remaining butter over the top of the baguette. Unroll the aluminium foil and tear off a large enough piece to wrap the baguette. Place the garlic bread into the centre of the foil and wrap it up making sure that you seal the ends well. Place the baguette into the centre of the oven and cook for ten minutes. Turn it over and cook for a further 10 minutes and remove it from the oven. Ready to serve.

plum cake
Ingredients:-
12 plums (halved and stoned)
3 eggs
320g sugar
200g crème fraiche
3 eggs
320g sugar
200g crème fraiche
1 tea spoon vanilla essence
230g butter (room temperature)
340g self-raising flour
230g butter (room temperature)
340g self-raising flour
1 orange (juiced & zest)
1 lemon (juiced)
icing sugar for decoration
method:-
Add the sugar into the mixer bowl, followed by the 3 eggs and the vanilla essence. Lower the whisk attachment, switch on the mixer to a medium-high speed and whisk for roughly 2 minutes. When it is nicely pale and fluffy, carefully start to add the butter, little by little. Spoon in the first batch while the mixer is still whisking, allow to mix in, then add the second spoonful. Continue adding the butter one spoon at a time until it is all mixed in. Whilst still whisking add the crème fraiche, briefly let it mix in, then turn off the mixer.
Now add the flour, orange juice, lemon juice and orange zest. Switch on the mixer to a slow whisk and blend for roughly one minute to combine everything, then switch off. Shake the mixture off the whisk attachment and remove the bowl. Using your spatula, give it a quick mix by hand to make sure that everything is completely mixed.
Using your spatula pour the batter into the spring form tin and spread it into the edges and the mould of the tin, finally smoothing over the top. Individually place the plums at an angle around the edges of the tin, using gentle pressure to push them slightly into the batter. Leave about 1 cm between each plum. Then make a second, inner ring until all the plums are used. Your cake is now ready to bake. Place the tin into the centre of the preheated oven (180 degree celcius) and bake for roughly 60 minutes. Once baked remove from the oven and allow to cool down before serving. Decorate the cake with a little icing sugar, then cut into slices and ready to serve.
